Proud of their biodiversity and terroir, converting to organic farming was a logical next step in their approach. Their motto: "Let nature take its course!" This involves using plant cover to enrich the soil's microorganisms and producing their own compost, resulting in excellent quality grapes with a strong sense of terroir. Winemaking is done naturally, without any additives or artificial temperature control. Long fermentations give the wines a unique character.
Philosophy: We must preserve the natural balances , from the soil to the bottle, all the way to your glass.

Cellar work: maceration for a few days and/or hours in vats, then fermentation and aging in barrels for a few months and/or years
