United by this passion, as well as other common interests such as music, and driven by the same generational energy, we have pooled our expertise around a Languedoc vineyard.
We admire nature. Our experiences have shown us the importance of biodiversity, both in our work and in our lives. It is essential to the balance of the landscape, its beauty, and its longevity. Within this balance, nature offers us intense olfactory and gustatory experiences that we wish to convey through our wines and spirits. The complementary nature of wine production and distilling will allow us to utilize all the by-products of the vine and wine within a circular economy system.
Before transforming the grapes, winemakers are vital to the life of the soil. Like all farmers, they are peasants. People of the land, of the soil, who, through their choices and practices, reshape our plains and hills each year. We, in turn, wish to contribute, with our own hands, to the outline of tomorrow's landscape.
The vineyard is located between Haut-Languedoc and Minervois, on the Cazelles plateau. Old vines between 80 and 120 years old for the majority and one plot of about twenty years old, planted on two distinct terroirs: white and grey lacustrine limestones in the south and variegated clays, silts and sandstones of the Assignan formation in the north.
The vines are cultivated using organic farming methods.
We take particular interest in not working the soils thanks to agroecological techniques and we practice gentle pruning on goblet and Royat cordon systems.
Yields are low (15hl/ha on average).
Copper is not used and we try to reduce sulfur doses as much as possible through alternatives such as essential oils, macerations, and plant fermentations.
These practices are of great importance to us in terms of the quality and stability of our wines.
The harvest is done by hand and the wines are made without additives: indigenous yeasts and no added sulfites; in order to best express the terroir, the ripeness of the grapes and its emotions.
The wines are packaged in the Alsace Flute format. The bottles are waxed with Alsatian beeswax, colored with natural pigments thanks to the custom work of a friend who is an artisan.
No sparkling wines at the moment.
