Biodynamic farming practices since 2006 and hand-harvesting in 20 kg crates allow us to vinify healthy grapes and transfer the wine to vats without pumping, oenological products, or gravity. Very long maceration in the form of grape infusion and aging, carried out according to biodynamic principles in various wooden barrels, refine the tannins. Bottling by hand, using gravity, respects the delicate nature of the wine. Since 2016, the estate has been moving towards aging in large stoneware amphorae to enhance the finesse of the wines.
