La Taillade is located on the top of a hill in the southwest, in the middle of Quercy blanc, in the Cahors region.
The vegetation of these clay-limestone plateaus, somewhat austere, is characterized by the presence of small oaks and often truffle beds.
Its landscape had already seen the design of the vine until the 1950s, before giving way to nature... and music.
It was in 2014 that Pierre Ferrari decided to initiate this adventure in the family property.
Everything has to be done: administrative practices, purchase of planting rights, soil preparation, choice of grape varieties, planting in 2016, trellising, pruning, tillage, etc.
All this takes time, imposes and teaches patience; it is finally in 2022 that the first vintages will see the light of day.
In the vineyard as in the cellar, everything is conducted with respect for living things, whether it be the soil, the plants, the grapes or people.
This is done through observation and listening, through attempts and errors, and this requires a good dose of humility...
The small size of the farm, 1.5 hectares, allows exclusively manual harvesting. The ripe bunches are first sorted on the vines and transported in boxes. This allows the grapes to arrive at the winery intact to begin vinification.
The harvest, once received, is destemmed for the white and partially destemmed or in whole clusters for the reds.
Vinification is carried out with native yeasts.
