The soils, composed of schist and limestone, are home to the typical Roussillon grape varieties: Grenache noir, blanc and gris, Muscat, Carignan and Carignan blanc, Lledoner Pelut, Cinsault, Syrah. Carrying the heritage of the values of the winegrowers who trained us, we work the vines organically, with a biodynamic approach. We plant trees and take care of a plot of almond and olive trees to diversify crops and preserve the biodiversity of our ecosystem.
THE WINES: In the cellar, our sensory approach allows us to work with indigenous yeasts, with little or no sulfur during vinification. Our schist and limestone soils bring finesse, freshness, and the salinity typical of our terroir to our wines.
The wines are aged in fiber or stainless steel vats for the vintages that we want to be fresh and pure; in sandstone jars and old barrels to enhance the depth of the finest Calce terroirs.
THE "GYPSY QUEEN" CUVÉES: The fruit of our collective work, the Gypsy Queen cuvées are made between friends, colleagues, and gastronomy professionals, using grapes purchased from our organic winegrowing neighbors in the Calce region. For Perrine, Alix Wineglass, Julie Claveau, Camila Opazo, and others, the Gypsy Queen collective is a laboratory for sharing, transmitting knowledge, and experiencing the joys of winemaking. Sparkling wines and experimenting with multi-tasking wines are on the menu!
