Hautes Terres de Comberousse - Paul Reder
The domain comes from a recent creation and ex-nihilo. It is located in a scrubland formerly exploited for its wood and grazed very extensively by the many flocks of sheep that counted the canton. The purchase of scrubland was motivated by a desire to develop a hidden potential. The Algerian origins, Alain Reder's experience of difficult farming conditions and rural development would allow him to carry out this business. Between 1973 and 1979 only his sheep roam these garrigues and allow the installation of the house and a sheepfold, the creation of access roads, electrification. Then comes the vineyard heritage when Lucien Reder, Alain's father, died; heritage that will allow the creation of the vineyard. The establishment of the vineyards follows years of development of the scrubland for the herd. It is therefore well aware of the potential of the land. Eleven hectares are planted in two years and will start producing five years later. The flock is gradually sold during this period and the sheepfold transformed into a cellar. Paul took over the field in 2001, after a year of working with his father.
No tillage or weeding - Natural weeding (which decays on its own during the first heat of June) - Trellising - Hand harvesting.
The grapes are destemmed. Each plot and each variety are worked separately. Pellicular maceration or direct pressing according to the grape varieties. A static static settling precedes a controlled temperature fermentation (19-20ºC). Breeding on lees for 4 to 9 months. Bottled 8 to 9 months after harvest.
