The winemaking of Jean-Baptiste and Charlotte Sénat convinced him that in a Mediterranean climate, it was better to make wines of light than of sun.
The 6-hectare vineyard is made up of plots of Cinsault, Grenache Gris and Noir, Carignan, Rolle and Mourvèdre, spread over several terroirs between the Aude plain and the foothills of the Montagne Noire.
The red wines are vinified entirely using whole harvests, then in vats for aging. The white wines are vinified and aged in vats and demi-muids.
All fermentations are obtained spontaneously, the vinifications are carried out without additives apart from 1.5 to 2g of sulfur added at bottling.
