I created "Le Domaine du Verdouble" and I settled in a private cellar on the Cucugnan terroir, aware of being the custodian of a rare and precious heritage: Terroir with exceptional viticultural qualities, unique historical environment, active cultural environment supported by private actors and dynamic institutions…
Although 80% of my vines are A.O.C. Corbières, I have chosen for all my wines (Corbières included), the Vin de Pays de Cucugnan appellation. Long used as a “sub-class” of the AOC, the “Vin de Pays” appellation is once again becoming a witness to the particularities of a terroir.
I am a winegrower in the Pays de Cucugnan, and I am committed,
in the vineyard:
To promote the natural life of the soil, to protect the soil.
To promote the natural balance of my vines in their biotope, without artificially forcing their production.
To work primarily preventively through the preservation of natural balances and appropriate cultivation techniques.
To preserve a complex, historical grape variety and population, respecting the biodiversity of the vine plants and a culture with planting density allowing the full expression of the terroir.
To promote the return, the development, of biodiversity in wine-growing landscapes.
To promote sustainable and united viticulture, concerned with the health and development of those who work there, and with its civic and social environment.
in the cellar
Manually harvesting healthy grapes whose maturity bears the identity of the terroir that welcomes me, shaped by the vintage.
To promote the natural balance of the harvest
Not to use techniques (osmosis, tangential filtration, cryoextraction, etc.) and inputs (enrichment, acidification, deacidification, yeasting, enzyming, etc.) intended to correct imbalances or defects coming from the vines, resulting in an artificial elaboration wines and their tastes.
To limit the inputs intended to stabilize the wine (so2): cf Commitment for a Natural Wine
in front of the consumer
To offer a natural, healthy, unpolluted wine, faithful expression of the terroir, the vine, the vintage and the winemaker.
To communicate in complete transparency the information concerning my work in the vineyard and in the cellar
To campaign for the truth of taste!…
