The Domaine des Gragnotes: Erika and Benoit, a couple of winegrowers from the Rhône Alpes region. We settled in the village of Paziols in the Aude in 2016, to embark on the adventure of the particular cellar. We work an area of 7 hectares; our vines are for the majority centenary. We both work on our farm in an organic way, we would like for the future to tend towards Biodynamics and green fertilizers (plant cover). However, we have learned that you must not want to go too fast, nature at its own pace and you have to know how to adapt. Before that we want to find stability in our grapes and our growing method. The harvest is carried out manually and in boxes. We do it this way, so that we can select the best of our grapes and put aside those that could have an impact during winemaking. It is essential for us to make wines from agriculture that respects the land and the vines. Currently in conversion, our wines will soon be certified organic (Ecocert). The vinifications are made from indigenous yeasts, naturally present on the grapes. Our wines are explorations; tastes, colors, and potential of our vines. Still having little experience, we learn with the sandstone of the seasons the evolution of our different wines. Today we like to call ourselves natural explorers. Our wines are natural: without any addition of input during winemaking, if not a minimum of sulphites at the end of fermentation, they are neither fined nor filtered. This job is an opportunity for us to be in harmony with our values and a way of expressing ourselves. Through our products we want to share our love of authenticity and our unique terroir.
