Les Clos * des Pères ** is located in La Livinière, in the Minervois on the foothills of the Montagne Noire. We took over 7 plots of vines on soils of different compositions predominantly clay-limestone. The estate is made up of several grape varieties: Vieux Grenache noir, Grenache gris, Cinsault, Syrah and Carignan. Respect for the soil and the vines pushes us to work most often with our arms to avoid compaction of the soil, and this up to manual harvesting, entirely carried out in crates, to keep the grapes intact until they are placed in vats. The vinification is carried out in vats for a gentle and slow extraction of the aromas.
