Domaine Les Carmels - Yorick & Sophie Lavaud
In 2010, we (Sophie & Yorick Lavaud) decided to take over 5 hectares of vines that we directly cultivated in organic farming. We do not design the vine independently of the environment in which it fits. We attach great importance to the maintenance of a rich ecosystem of great heterogeneity. The treatments in the vineyard are thought out and enriched by herbal teas and manure produced in Carmels. Yorick has also set up an orchard of about fifty trees of different varieties and a family vegetable garden of 50 acres. In the future, there will be market gardening in Carmels, necessary to maintain optimal floral diversity. In short, Yorick is an agricultural engineer who loves Nature, and Sophie supports him in everything he does.
In the vines: We devote a lot of our energy to working the soil and trying to control a qualitative grassing which, coupled with clays, is responsible for regulating the growth of the vines. We manage the vineyard in Bordeaux pruning and carry out all the green operations necessary to obtain high quality grapes (de-sucking, high trellising, leaf stripping and thinning if necessary).
In the cellar: The work in our gravity cellar is modulated according to the qualities of the grapes harvested, and managed from day to day according to the tasting. It consists in everything and for everything of load shedding and attention.
