In addition to sulfur and copper, protection is achieved through herbal teas and plant decoctions and whey. The harvest is manual.
Winemaking is done without inputs (no sulfur or yeast) and no use of technology (no thermoregulation of the vats, no filtration), which means working without a safety net. The refusal of aromatization (use of wood, sulfur, selected yeasts) allows us to reveal often forgotten facets of Bordeaux wines
