Originally, Florian grew up in a family of winegrowers, in Germany, Weingut Clemens Busch, a Moselle vineyard, and then studied viticulture and oenology and gained his share of experiences in France and abroad, before settling down with Paola, who had just followed a retraining course in agriculture.
The estate gradually extends over 9 hectares in mixed farming, with vines, aromatic plants and olive trees.
Working the land organically and biodynamically has always been a given. From the outset, we have adopted cultivation practices that promote soil life and biodiversity.
Grassing is "spontaneous", for a large part of the year, depending on water pressure. Some plots have been sown with green manure, to allow good plant cover, a supply of organic matter, an improvement in soil life, and auxiliaries. We intervene according to observations and needs.
We add compost, apply biodynamic preparations (500P) and herbal infusions (horsetail, nettle, etc.) or hydrosols (noble laurel) to strengthen the vines.
Here and there, we plant with other small or large fruit trees (barbary wolfberries, jujube trees from Provence, apricot trees from Roussillon), as well as aromatic plants that are resistant to drought.
The harvest is manual, and combines good human energy, respect for life, and a precise choice of maturity for the natural expression of the terroir.
In the winery, our vinifications are minimally interventionist. Our wines are without make-up. Fermentations are spontaneous, with indigenous yeasts. They are specific to our terroir, and reveal the life and balance of the soils in the vineyard.
The wine is not fined or filtered. Sulfites are used in minimal quantities, when necessary.
Direct pressing or maceration, with or without stalks, we like to play on the different extractions. Maceration times vary depending on the years, the degrees, the tannins. Pumping over, punching down and pressing punctuate the post-harvest…when we accompany the grapes on the path to wine!
Our intention is to remain balanced and subtle.
We offer 1 white wine, 1 orange wine, 1 rosé, 1 petnat blanc de noir, 4 reds, and delicatessen products made from plants and olives.
