Champagne Bourgeois-Diaz - Jérôme & Charlotte Bourgeois
We cultivate a 6.80 ha estate, made up of thirty plots, forty years old on average, mainly south/south-west oriented, on clay-limestone soils. The grape variety is 55% Pinot Meunier, 30% Pinot Noir, and 15% Chardonnay.
We have started a conversion to organic and biodynamic agriculture, and we have been ecocert and demeter certified since the 2014 harvest.
In the vineyard, we use copper and sulphur, supplemented with herbal teas, mainly based on horsetail, nettle, dandelion, chamomile, meadowsweet, wicker and comfrey.
The vines are worked with a tractor, and we have been ecograzing in a good number of plots since 2020. We are experimenting with sowing green manure, and have planted trees in a plot of fifty acres, in order to see the impact that this can have on several points (biodiversity, health of the vine, landscape...)
In the cellar, the wines are seeded with a starter, the malo is done naturally, we use just a little sulfur during the pressing (1 to 2 g/hl).
The wines are neither filtered nor fined, and we use yeast selected on our estate for the prize de mousse. The aging on slats is about 24 months for the base cuvées, and 5 to 8 years for the vintages.
All our cuvées have been non-dosed since 2018.
