Winegrowers from father to son since 1776. Family estate of 8 hectares, spread over 60 different plots, in Verzy, "Grand Cru", Grande Montagne de Reims. Clay-limestone, silty-limestone soil over flint (lower Campanian chalk). Northeast exposure.
The estate has been farmed biodynamically since 2008 and is certified by Demeter. Agroforestry practices are implemented with over 1,000 trees and shrubs planted within the vineyard plots. Animals such as chickens and sheep are introduced for winter grazing.
Grape varieties: 60% Pinot Noir, 35% Chardonnay, 5% Arbanne, Pinot Gris, Pinot Blanc, Pinot Meunier, Petit Meslier. In the cellar:
Alcoholic fermentation with indigenous yeasts. Malolactic fermentation carried out to limit sulfite doses, spontaneous fermentation.
The wines are aged on their lees for 7 to 24 months in barrels. They are neither filtered nor fined. Very little or no sulfur is used (the average total SO2 is 15 mg/L, and less than 5 mg/L is free SO2). The wines are then aged on their lees in the bottle for 3 to 5 years.
