The Domaine de la Chevalerie, which Laurie, Emmanuel & Stéphanie Caslot take care of today, is a long family story that began nearly 400 years ago. Located on the AOC Bourgueil hillside, the vineyard grown organically (end of 2008 certification) and biodynamically extends over different terroirs and localities, each giving wines with their own identity. It is with our feet in the ground that we cultivate our Cabernet Franc vines, vines aged 35 to 75 years on average. Our interventions are always moderate. We do not seek to interfere in the development of the plant; only to accompany and protect it by gently promoting biodiversity, life and the balance of the soil. When the harvest arrives, we wait for the correct maturity of the fruit and ensure careful sorting, after an entirely manual harvest in boxes.
