Domaine de Cassiopée - Talloulah et Hugo Mathurin
Talloulah and Hugo Mathurin, agricultural engineers by training, we settled in Sampigny-les-Maranges, in the heart of the hills of Maranges, in the south of the Côte de Beaune, at the beginning of 2020.
Having no family in Burgundy and in the wine world, we therefore created the Domaine de Cassiopée by recovering 5 hectares of vines in regional appellations (Hautes-Côtes Rouge and Blanc, Bourgogne Rouge and Bourgogne Aligoté) and Village ( Maranges Rouge et Blanc), as well as a vat room and a cellar.
From our installation, the minimum condition was to be able to work in Organic Agriculture, but also by using certain principles of biodynamics (dynamization of the preparations, work in the cellar according to the lunar cycles, work and care of our vines with the plants).
The vines, almost all of which are located less than one kilometer around the estate, are worked with maximum care for good agronomic sense, allowing a balance to be established between the vine and its terroir. Rich in an extremely diversified plot of land (some vines are on limestone rock and others on a granite subsoil) and of varied ages of vines (some plots are 90 and 110 years old), we are committed to vinifying and bottle the wines from each plot separately. All of our production comes from the cultivation of our vines, without any external supply.
Work in the cellar of the wines by aging them in sandstone or earthenware jars, and in old barrels so as never to mask the perception of the terroir, and without fining or filtration, using as the only input sulfur in homeopathic doses before bottling .
