Kevin Bouillet

Kevin Bouillet, just 28 years old, operates 3.4 ha, of which 1.2 were planted in the years 1930-60 by his grandfather. He works with typical Jurassic grape varieties: Chardonnay, Ploussard, Trousseau, Savagnin and Pinot Noir. Following a law degree in Besançon, he moved on to a BTS Viti-Oeno where he will do his work-study program at the Domaine de la Tournelle with Pascal and Evelyne Clairet. Since taking over the estate in 2018, he has converted all of the vines to organic. The old vines are grassed and the young see their soil worked. The vinifications are the least interventionist possible, as close as possible to the living.
