Gilles & Catherine Vergé
The domain
Our exploitation includes 5 hectares of vines (white chardonnay) vinified in our cellars. Our vines are located on hillsides, east exposure on clay-limestone soil from the Jurassic period.
The vines
Our cultivation method begins with a March pruning, avoiding any winter treatment. The floors are worked on the surface, taking care to respect the environment. The weeds that will grow will be mowed in the spring and then this summer. Then, the soils will be worked before harvest. There is no fertilizer input, only a nutrient input can be applied in the event of a deficiency, and this very occasionally. The phytosanitary treatments are applied in the same spirit. The vines constituting our three "VIRE-CLESSE" cuvées are 76 years old for the youngest and 120 years old for our oldest. Our Mâcons come from slightly older plots.
Vinification
The fact of working the wines in natural implies letting the indigenous yeasts operate their successive transformations in order to obtain a long, calm and stylish vinification to allow the wines to reveal all their expressions. In addition, the use of a minimum of sulfur or no sulfur at all is a rule of conduct.
