We stand out a bit in the landscape, because in addition to being certified as Organic Agriculture, we follow the principles of Biodynamics and plow our vines with our Comtois horses; we have decided to follow our convictions!
When ripe, the grapes are hand-picked and then gently pressed, which allows us to fully respect the nature of our terroirs.
After a light settling, the indigenous yeasts present on the grapes allow the natural start of alcoholic fermentation. Malolactic fermentation then begins spontaneously.
Our wines are aged on their fine lees in stainless steel tanks, barrels, or demi-muids of oak until early summer. Our wines are unfiltered, and we handle the bottling ourselves.
As young winemakers at the dawn of a new wine-growing era, we wish to begin a transition as soon as possible, moving towards viticultural agroforestry, resistant grape varieties but also the preservation of our current vines.
We are passionate winemakers and it is with pleasure that we will share our philosophy and know-how.
