In 2018 I had the bizarre idea of taking care of 1 hectare of old vines (Gamay) in Legny in the south of Beaujolais, in addition to my restaurant business. The goal: to work in certified organic farming, to produce my own wine without inputs. Thanks to the support, advice, and invaluable help of my friends and family I was able to achieve this goal. I have little equipment, I do not use a tractor, only a small cultivator to scratch the soil. Sulfur and copper treatments are applied with a backpack atomizer, and herbal treatments with a small sprayer. The harvest is done by hand and the grapes are transported in small crates. No inputs are used in winemaking, there is no filtration, I do not sulfur for bottling. It is unthinkable for me to use chemicals, the organic farming certificate was obvious. All vintages bear the names of songs that accompany me in my work.
