La Cave du Buizin - Maud Blache
The domain :
Domain of 1ha5 composed of small sloping parcels exposed South / South West. In the vineyard as in the cellar we accompany the grapes in their growth and transformation, we leave free the aromatic expression of our grapes. We like to allow them to surprise us!
We work in Bio and we vinify without input and limiting sulphites.
The vines:
Our vines have the particularity of being very old and planted with several dozens of different grape varieties. Some of these varieties are rare, others are unknown. We strive to protect them and prevent their disappearance. The vines, very steep, are not mechanizable. Treatments, plowing, summer work, clippings are "old fashioned": atomizer back, pick, brush cutter, etc ... of course, in Bio.
Vinification:
Winemaking at the Buizin winery is a caring accompaniment to grape juice to its ultimate purpose: wine. We do not use any oenological chemistry before or during fermentations. We sulphitate slightly at bottling to ensure the stability of our wines at home.
Wines :
The rosés and whites are pressed delicately immediately after harvest and then put in vat. We only intervene on fermentations if necessary and only by pumping over. Rosés and whites do not have residual sugars and MLFs are made.
The reds are scraped at 70%, the maceration is about 10 days with 1 to 2 manual pigeages per day (depending on the tasting). The breeding is done in vats in 8 to 10 months.
