Domaine du Coulet - Matthieu Barret
In 2018, 20 ha of vines were planted on hillsides dominated by granite for Cornas and clay-limestone for Côtes du Rhône.
In the vineyard…
Organic and biodynamic cultivation are essential, inputs are limited to their strict minimum.
The tillage is mainly done by our animal traction service providers (Thierry and Vivian) with mules and draft horses. About 1 ha is winched, and the tractor where it goes!
Treatments are carried out on the back of all the hillsides and with a tractor on the plateau. Only 4 to 5 liquid treatments based on sulfur and copper are carried out, embellished with a few sulfur dustings. We only use sulfur from mining and not petroleum sources.
Amendments are in the form of hand-spread plugs made from composted sheep manure.
Biodiversity is the main concern for the development of our hillsides. The creation of water points, wild embankments and respect for existing trees are the pillars of this approach.
The desired yield is 20 to 30 hl per hectare….
In the cellar …
The vatting of the grapes is done entirely by gravity in tanks of 20 hl maximum in concrete or stainless steel. We destem almost all of the red grapes. No input is added during vinification. The gentle extraction is done by small pumping over or pigeage. No temperature control is used to maintain the aromatic authenticity of the vintage.
The presses are carried out by pneumatic presses.
From the 2017 vintage, the use of oak barrels is prohibited in favor of egg-shaped cement and terracotta vats to express the pure aromatics of the grapes without influence from the container.
The wines are bottled by us and the objective is to have a total sulfur content of around 30 mg/l.
In some cases, cross-flow filtration can secure wines with a high bacterial risk.
