We have 0.52 ha of old Gamay vines (planted in 1962) in Juliénas on the Vayolette cru (beautiful plot on a blue stone terroir and on hillsides certified organic since August 2024) for ~2000 produced.
The grapes are harvested in the morning and then spend an afternoon and a night cooling in a refrigerated container, before beginning a slow, cold carbonic maceration to preserve the characteristic fruitiness of Gamay and the depth of our terroir.
The grapes are then pressed and the juices finish their fermentation in vats, before being placed in 4 Burgundy barrels of a few wines (228L) & 1 demi-muid (500L) for 9 months.
The wine undergoes only one pumping over in air by gravity, no filtration or fining and the least possible input (<20mg/L of SO2 added).
