Single-plot cuvées worked in natural fermentation highlight their diverse terroirs, predominantly clay-limestone, where the colluvium and lava projections (lapilli: basalt, peperite, pozzolan) recall the volcanic heritage of the soil.
Conducted in organic farming for almost 15 years, the young 20-year-old vines develop alongside the sixty-year-old vines. Tractor passage is limited and the inter-row space is kept grassy to limit slope erosion.
Independent wine growers, they follow their grapes from the vine to bottling (hand harvesting, natural fermentation of the grapes with their native yeasts, without the addition of sulphites during fermentation, aging for 8 to 10 months in stainless steel vats or in oak barrels).
