What nature wants is a jungle, but it's not exactly what's easy to cultivate and we try to find the ideal balance. We've been working with the landscape and the land where we have the vineyard for over 40 years. The winery was officially established in 1991. As much as possible, we try to bring the same philosophy to the cellar. We seek a balance between what is ideal for us and what is ideal for the wine. All of our wines are spontaneously fermented with a minimum of external intervention. After fermentation, the wines are racked and sit on fine lees until it is time to bottle them. They are then bottled with a minimum of added sulphur, sometimes undergoing coarse filtration.
