The approach throughout every step of the winemaking process is to simply support and accompany the grapes, the juice, and the wine. The primary focus is unquestionably on the vineyards, aiming to maintain the vines' health and vitality while constantly striving to increase biodiversity.
From pressing to bottling, there is no interruption in the process. No batonnage, no filtration, and the wines remain on the full yeast until bottling. In addition to minimal intervention, experimentation with skin contact and blending red and white grapes are significant aspects of the winemaking journey, aimed at producing vibrant bottles with distinct character.
