The Domaine de Ribonnet is located 30 km south of Toulouse between the Garonne and Lèze valleys. Located outside any geographical appellation, we produce our wines in IGP Comté Tolosan and certain vintages in French wine.
The estate, formerly owned by Clément Ader, was taken over in 1975 by my father Christian, who restructured the vineyard and refreshed the century-old cellar. In parallel with his trials of "cosmopolitan" grape varieties, he converted the vineyard to organic farming in 2001. I returned to the estate in 2015 to take over and bring new impetus to the estate. The estate now has 14 grape varieties spread over 24 hectares.
Above all, I defend organic viticulture which involves understanding our plant-soil systems in order to offer wines that reflect their terroirs. I am also very sensitive to the notion of the agricultural landscape. In other words, we must be landscape architects and participate in the reforestation of our vineyard plots so as not to make vines a monoculture. This involves regular planting of hedges around existing plots and the integration of trees into our new plantations. This diversity must also be found within the vineyard plots, via spontaneous cover or the establishment of plant cover, and if possible the grazing of the latter by the sheep of our employee Renaud. Overall, we strive to think about resilient systems.
All our grapes are harvested by hand and delicately transported to the cellar. The whites are renneted in whole bunches while the reds are completely destemmed before fermentation with our native yeasts. The extractions are intended to be gentle and the aging takes place in vats or barrels for a few years. In red as in white, we carry out few rackings in order to preserve the fermentation CO2 and the fine lees, which offer better protection and more stability to our wines.
Our wine ranges and labels were renewed this year using my father's artistic work. His drawings have been faithfully reproduced and now constitute the new identity of the estate.
Our estate is open to visitors from Monday to Saturday and we take the time to explain our profession through regular visits to our vines and our cellar.
