I work 4.3 ha of vines on a volcanic soil around Caux in Hérault (Languedoc). Basalt gives minerality, straightforwardness and elegance to the wines. I vinify as simply as possible so that my wines express this terroir freely and with honesty.
I have 2.8 ha of vines in production: Grenache Noir and Grenache Blanc on a lava flow, as well as Carignan, Terret and Marsanne on the slope on a gravel soil mixed with basalt. In 2013 I planted 1.5 ha of vines on this same terroir, namely Grenache Noir, Grenache Gris and Cinsault. The age of the vines: 70 years (Carignan and Terret), 30 years (Grenache Noir and Grenache Blanc), 15 years (Marsanne), 3 years (plantiers).
For the whites: direct pressing in whole bunches. Coarse settling in 2013, no settling in 2014. No temperature control and aging on total lees for about 8 months.
For the 2013 red: destemming without crushing, gravity vatting, co-fermentation of Carignan and Grenache. Some punching down at the start of fermentation, wetting of the hat afterwards. Gentle maceration for 1 month. Reintegration of press juices. Aging on fine lees for 8 months.
