We have been watching over the Estate since 2013, following the Augé family. It has been organic and biodynamic for 30 years (Ecocert certification). Nine hectares (including 6 ha of vines) in one piece around the house, on hillsides on the south bank of the Cher; this is our haven. In addition, there are 3 plots of vines (2 ha) on the Cher plateaus. We exclusively vinify our own grapes, those of which we take care of the size at harvest. Nine grape varieties are present on the Estate: White: Sauvignon, Pineau and Chardonnay Menu Red: Gamay, Pinot Noir, Pineau d'Aunis, Côt, Cabernet Franc and Cabernet Sauvignon Most of the vines are on flint clay soils and a clay rock subsoil, mostly exposed to the north. Mainly plots between 30 and 50 years old, some younger and some around 70 years old. Tillage aims to compete with natural grass cover without ever having bare soil, to maintain a diversity of flora that hosts a variety of fauna. The key to our winemaking is to choose our harvest dates as accurately as possible according to the cuvées that we wish to produce. The grapes are treated as a whole harvest, either in direct press or after maceration, in a vertical Coquard press of 2000 kg, in slow and low intensity presses. Our approach to juices is without scientific a priori. The wines, except natural sparkling wines, are aged in wood (lightning, 1/2 muids and barrels of several wines). Bottling is done by hand, by gravity and by hand with no added sulfites. No oenological product is used. Difficulties in fermentation have led us, in rare cases to sulphite certain wines during vinification. No filtration, no fining or temperature control.
