After working in Chile, Yohan decided in 2012 to return to settle in his native region, Beaujolais. He then acquired 2 hectares of old vines in AOP Moulin-à-Vent and from the start, decided to apply viticulture without pesticides. Today it is 7 hectares of vines whose centerpiece is 5 hectares in the Les Michelons climate on the upper part of the Moulin-à-Vent appellation on a granite soil rich in manganese and quartz. Small plots in Chénas, Fleurie and Beaujolais-Villages complete the area. Currently in High Environmental Value (HVE) conversion, the estate will be certified from the 2019 vintage. A follower of wine with no input, Yohan conducts his vinification without adding So2, yeasts and this without any chaptalization. Only a tiny amount of SO2 is added during bottling to ensure precision and aromatic purity of the fruit. The vintages are aged from 9 to 18 months on lees in old Burgundy barrels to refine the materials and are then bottled without filtration.

Après avoir œuvré au Chili, Yohan décide en 2012 de revenir s’installer dans sa région natale, le Beaujolais. Il acquiert alors 2 hectares de vieilles vignes  en AOP Moulin-à-Vent et dès le départ, décide d’appliquer une viticulture sans pesticides.

C’est aujourd’hui 7 hectares de vignes dont la pièce maitresse est 5 hectares dans le climat Les Michelons sur la partie haute de l’appellation Moulin-à-Vent sur un terroir granitique riche en manganèse et en quartz. Des petites parcelles sur Chénas, Fleurie et en Beaujolais-Villages complètent le domaine.

Actuellement en conversion Haute Valeur Environnementale (HVE), le domaine sera certifié à partir du millésime 2019. Adepte du vin sans intrant, Yohan conduit ses vinifications sans ajout de So2, de levures et cela sans aucune chaptalisation. Seule une infime quantité de SO2 est ajoutée lors de la mise en bouteille afin d’assurer une précision et une pureté aromatique du fruit. Les crus sont élevés de 9 à 18 mois sur lie dans de vieux fûts de Bourgogne afin d’affiner les matières et sont ensuite mis en bouteille sans filtration.
