In 2018 I had the bizarre idea of taking care of 1 hectare of old vines (Gamay) in Legny in the south of Beaujolais, in addition to my restaurant business. The goal: work in certified organic agriculture, produce my own wine without inputs. Thanks to the support, advice, and precious help of my friends and family, I was able to achieve this goal. I have little equipment, I do not use a tractor, only a small tiller to scratch the soil. Sulfur and copper treatments are applied with a knapsack sprayer, and herbal treatments with a small sprayer. The harvest is done by hand and the grapes are transported in small crates. No input is used in vinification, there is no filtration, I do not sulfur for bottling. It is unthinkable for me to use chemicals, the certificate in organic farming was obvious. All cuvées bear the names of songs that accompany me in my work

En 2018 J’ai eu l’idée bizarre de m’occuper d’1 hectare de vielles vignes( Gamay) à Legny dans le sud du Beaujolais, en plus de mon activité de restaurateur.

L’objectif: 
travailler en agriculture biologique certifiée, produire mon propre vin sans intrants. Grâce au soutient, aux conseils, et à l’aide précieuse de mes amis et ma famille j’ai pu atteindre ce but. J’ai peu de matériel, je n’utilise pas de tracteur, seulement un petit motoculteur pour griffer les sols. Les traitements de souffre et cuivre sont appliqués à l’atomiseur à dos, et les traitements à base de plantes au petit pulvérisateur. Les vendanges sont réalisées à la main et le raisin est transporté en petites caisses. 
Aucun intrant n’est utilisé en vinification, il n'y a pas de filtration, je ne soufre pas pour la mise en bouteille.

Il est impensable pour moi d’utiliser des produits chimiques, le certificat en agriculture biologique était une évidence.
