Suprême TERRAIN ET EMPLACEMENT : Appiano Monte, Putschwan et Kalterer Höhe. Entre 500 et 700 m d’altitude. Terrain argileux, calcaire, en partie très pauvre, riche en squelette, profond, avec un pourcentage élevé de roche dolomitique blanche. RÉCOLTE : Avec la récolte de Solaris, la récolte s’ouvre chaque année. Raisins sélectionnés à la main entre le 20 août et le 12 septembre 2017 EN CAVE : Macération de quelques heures suivie d’un pressage délicat des raisins entiers. Fermentation spontanée du moût par les levures indigènes du vignoble. Maturation en acier, et en fûts de chêne neutre d’abord sur la grosse lie puis sur la fine. Mis en bouteille en août 2018, non filtré.
