Our philosophy, since the beginning in 1998, is to make wines that are as honest as possible.

As for the production, we do not use anything, neither yeasts nor additives of any kind, the fermentation is spontaneous and we do not have technology or machinery to treat the wines, so the only way of stabilization is to take advantage of natural resources, in our In case of cold (in winter we reach -17 degrees), the wines are not filtered and clarified with anything

They go from the barrel/jar or tank, once settled naturally, to the bottle.
