Small estate in progressive construction since 2010, we have today in our hands 5.5 ha of vineyards and as much fallow land whose fate is emerging in the near future. This small estate is born of love at first sight of a farmer for a land, a landscape, a first piece of vine ...... It is in Cassagnoles and Camplong, on the heights of the Black Mountain that we cultivate our vines with the greatest care in order to reveal to the best this so particular soil. At the limits of Aude, Hérault and Tarn, we look after the last parcels of vines still at this altitude. The vines therefore enjoy a sunshine worthy of the south of France and a nocturnal freshness due to the altitude, which offers the grapes a slow and progressive maturation. This gives our wines this freshness and aromatic finesse. The main idea is to make a natural wine that would taste of its terroir, and its vintage. The grapes being picked at their fairest maturity, in any case to the one who speaks to us, each plot is vinified separately which gives several vintages which each have a true identity. An exception all the same for the cuvée "The Tchô Canon", resulting from two vines whose maturities follow each other.

Petit domaine en construction progressive depuis 2010, nous avons aujourd’hui entre nos mains 5,5 ha de vignes et autant de terres en jachère dont le destin se dessine dans un futur proche.

Ce petit domaine est né du coup de foudre d’un paysan pour une terre, un paysage, une première parcelle de vigne……
C’est à Cassagnoles et à Camplong, sur les hauteurs de la Montagne Noire que nous cultivons nos vignes avec le plus grand soin afin de révéler aux mieux ce terroir si particulier.
Aux limites de l’Aude, de l’Hérault et du Tarn, nous soignons les dernières parcelles de vignes encore à cette altitude.
Les vignes bénéficient donc d’un ensoleillement digne du sud de la France et d’une fraîcheur nocturne dûe à l’altitude, qui offre aux raisins une maturation lente et progressive.
C’est ce qui confère à nos vins cette fraîcheur et cette finesse aromatique.

L’idée principale est de faire un vin nature qui aurait le goût de son terroir, et de son millésime.
Les raisins étant cueillis à leur plus juste maturité, en tout cas à celle qui nous parle, chaque parcelle est vinifiée séparément ce qui donne plusieurs cuvées qui ont chacune une vraie identité. Une exception tout de même pour la cuvée « Le Tchô Canon », issue de deux vignes dont les maturités se suivent.
