The Pruneto vineyards are divided into 3 plots for a total of 3.6 hectares. The lowest vineyard is located at 400 m above sea level with southern exposure and predominantly clayey soil with an alberese skeleton and moderate limestone content, the average age of the plants is 25 years. The highest was planted in '72 and is located at 500 m with exposure to the West, a more markedly sandy soil with a skeleton of Chianti boulder and marl. In the middle of the two is the youngest vineyard, planted in 2016 on soil that has intermediate characteristics compared to the other plots. The vines present are Sangiovese, Merlot, Canaiolo nero and Ciliegiolo, plus some plants of Foglia Tonda, Trebbiano toscano, Canaiolo bianco and Malvasia del Chianti.
The grass cover is total on all three vineyards and tractor passages are limited to what is strictly necessary, mainly for mechanical processing on the rows, the decompaction of the roadways after harvest and for the treatments, which are carried out with copper, sulfur and corroborating agents. of natural origin in an attempt to limit the use of the first two elements as much as possible. Thanks to the grassing, we do not use fertilizers, with the exception of small quantities of manure or compost to occasionally strengthen plants that demonstrate low vigor. All operations on the plants are carried out manually, from pruning to harvesting.
In the cellar all fermentations are spontaneous without temperature control. Winemaking is mainly carried out in concrete vats with frequent pumping over and delestage when greater extraction is required. Once the malolactic fermentation is complete, the wine is moved to the cellar where refinement takes place in 30hl oak barrels for at least 20 months in which the wine is "cleaned" with one or two decantings per year. The only oenological product used is a modest quantity of sulfur dioxide, usually added at the end of the malolactic fermentation and before bottling.
