Naturally Aged Live Wines only with grapes My approach to sulfur-free wines began in 1986. It was thanks to my oenology teacher who talked about testing without So2 during the harvest that I immediately started experimenting with all my wines. It should be noted that this technique also reduced the contribution of So2 preservative in order to stabilize the wine before bottling. This is why my wines have always contained very little So2 "suffers". In 1988, a chemist client, director of a company in Valais, ordered some wine from me. During the delivery, we tasted in his cellar and he made me discover a natural wine that he raised himself... "Great" After receiving some advice, I embarked on the harvest of the same year. I started with one barrel per year of Pinot Noir in barrel. Its original name was the Incredible. Then I called him the wizard. Some of you are surely saying to yourself: "Ha yes, so that was it!" Life has led me to train in natural therapies and I have regularly transferred this knowledge to care for my vines and my wines. I changed the name again after making some improvements to the approach, such as a pact with Oxygen. Its name became Medieval. Along the way, I naturally wanted to make a full range of living wine. Obviously in Biodynamics, to which I added Permaculture practices, then agriculture in bio conciliation. In 2005, I started a range of wine, very close to the living, always more in connection with the Cosmos and the winemaker. Indeed, the best of recipes is revealed very differently depending on the “cook”. So we leave the technique to get closer to an artistic side. Each wine will become unique and this whole approach will allow it to develop unparalleled aromas and qualities. A wine is first made in the vineyard by working with the moon and the constellations. This will concentrate within the grape the qualities that will unfold during natural fermentation. This way of doing things reinforces the effect of the winemaker's love for an authentic and unique wine. My approach to fearless winemaking allows wines not to be sensitive to oxidation, which, on the other hand, also brings subtle aromas. My wine keeps and ages very well thanks to the pact with oxygen. Mon approche avec les vins sans soufre commença en 1986.
C’est grâce à mon professeur d’oenologie qui a parlé d’essai sans So2 lors des vendanges que j’ai immédiatement commencé à expérimenter sur tous mes vins.
Il faut savoir que cette technique diminuait également l’apport de conservateur So2 afin de stabiliser le vin avant la mise en bouteille. C’est pour cela que mes vins
ont toujours contenus que très peu de So2 « souffre ».
En 1988 , un client chimiste, directeur d’une entreprise en Valais, m’a commandé du vin. Lors de la livraison, nous avons dégusté dans sa cave et il m’a fait découvrir un vin nature qu’il élevait lui-même... "Génial"
Après avoir reçu quelques conseils, je me suis lancé aux vendanges de la même année.
J’ai commencé avec une barrique par an de Pinot Noir en fût. Son nom initial était l’incroyable. Puis je l’ai appelé le sorcier. Certains d’entre vous êtes sûrement en train de vous dire: "Ha oui c’était donc ça!" 
La vie m’a amené à me former en thérapies naturelles et j’ai régulièrement transféré ces connaissances pour soigner mes vignes ainsi que mes vins.
J’ai à nouveau changé le nom après avoir effectué quelques améliorations de l’approche, comme par exemple, un pacte avec L’oxygène. Son nom est devenu le Médiéval. Chemin faisant, j’ai eu naturellement envie de faire une gamme complète de
vin vivant. Evidemment en Biodynamie, à laquelle j’ai ajouté des pratiques de Permaculture, puis d’agriculture en bio conciliation.
En 2005, j’ai commencé une gamme de vin , très proche du vivant, toujours plus en lien avec le Cosmos et le vigneron. En effet, la meilleure des recettes se dévoile très différemment selon le «cuisinier». On quitte donc la technique pour s’approcher d’avantage d’un côté artistique.
Chaque vin va devenir unique et toute cette approche va lui permettre de développer des arômes et des qualités inégalées.

Un vin se fait d’abord à la vigne en effectuant un travail avec la lune et les constellations. Cela va concentrer au sein du raisin les qualités qui vont se déployer lors de la fermentation naturelle.
Cette manière de faire permet de renforcer l’effet de l’amour du vigneron pour un vin authentique et unique.
Mon approche d’une vinification sans peur, permet aux vins de ne pas être sensible à l’oxydation, qui, d’autres part, amène aussi des arômes subtils. Mon vin se conserve et vieilli très bien grâce au pacte avec l’oxygène.
