The Undoubted Faith, the one that leads us to a point, which we will probably never see, because there is no other way to take, and in any case, nothing is more satisfying.
Magic, which makes that hidden from view, from the light, unexpected things happen underground, unexpected in the vats, implausible in the bottle.
And also the part of bluff. How could this project which seems so obvious to us, in which we put so much naturalness, spontaneity, irrationality, so many of our strengths and our weaknesses, sometimes absurd willpower, and often total procrastination, could convince anyone, including us?
And therefore the impostor syndrome, from which we must never recover.
In the vineyard:
We only work with interspecific grape varieties, old and new: Rondo, Pinotin, Solaris, Souvignier Gris, Prior, Monarch, Doc, Foch/Millot, 5455, Chambourcin, Landal Noir etc...
We tell ourselves that a vine, like a fruit tree, must be able to function without too much human intervention. We do not work the soil and have only planned to treat, if necessary, with herbal teas and manure.
We just take care to manage the spontaneous grassing according to the weather (mowed and deposited under the row) and to adapt the grape load to each stock.
In the basement:
We vinify without any input, at the bottom of a very cool cellar, in various containers, stainless steel, terracotta, fiberglass, polyethylene, wood, chosen for their capacity at harvest time more than for their nature...
There are 5 different plots planted, one per year since 2018, for a total of 1.5 hectares. Each plot is a different "model". One is a citizen association project, another was planted as part of a participatory eco-place, the largest is a collaboration with a restaurant in Brussels, the other two have found a place on the land of farmers curious to see something new growing there.
Everything is vinified in the same cellar in an old farm in Ottignies (20 kilometers from Brussels)
