LEO UIBEL AND MICHAELA DECIDED IN 2007 TO START THEIR OWN VINEYARD. Our goal from the start was to focus on the vineyards of the Ziersdorfer Kohlberg. This was documented as a vineyard in the church books as early as 1220. The subsoil of these vineyard soils is shaped by the sea sediment of the primeval Danube - made of lime, sand and gravel. CERTIFIED BIODYNAMIC BY DEMETER The idea of pure, good wine from the individual vineyards soon led to the concentration on organic farming. The conversion of operations began in 2010 with the conversion course and has been pushed forward with a lot of commitment since then. Since 2018, the winery has been managed biodynamically according to the principles of Rudolf Steiner. With 2021 the winery is Demeter certified. HAND READ AND MAKED UP 08/15 is not our thing, we want to make the REAL pivotable again. Thus, we give our vineyards with their different soils the opportunity to make themselves visible in the glass. The weather over the course of the year also has an important influence on the taste of our wines. Handpicking guarantees that only the best grapes come to our cellar. Unvarnished, these come from the barrel directly into the bottle in the shortest possible way at our winery. Thus, the natural quality is directly guaranteed. Our wine is made exclusively from grapes without any additives! A little bit of sulfur is only added shortly before bottling. This purism is certified & controlled by Demeter year after year.

LU À LA MAIN ET COMPOSÉ
Le 15/08 n'est pas notre truc, nous voulons rendre le REAL à nouveau pivotant. Ainsi, nous donnons à nos vignobles avec leurs différents terroirs la possibilité de se rendre visibles dans le verre. La météo au cours de l'année a également une influence importante sur le goût de nos vins. La cueillette manuelle garantit que seuls les meilleurs raisins arrivent à notre cave.

Non vernis, ceux-ci viennent du fût directement dans la bouteille de la manière la plus courte possible dans notre cave. Ainsi, la qualité naturelle est directement garantie. Notre vin est issu exclusivement de raisins sans aucun additif ! Un peu de soufre n'est ajouté que peu de temps avant la mise en bouteille. Ce purisme est certifié & contrôlé par Demeter année après année.
