The Grottafumata Agricultural Company was founded in 2013 with the management of an 8 hectare olive grove in Nocellara Etnea and the consequent production of oil. We use insects to fight parasites and facilitate pollination, we do not use irrigation systems and, at the base of the plants, the many edible herbs present help us keep the soil moist. We use the grass cutter to encourage organic formation after the grasses have been grazed by the sheep. We have been dealing with vineyards (4 hectares) since 2017, in the south of Etna, on the east and west sides, between Zafferana Etnea, Trecastagni and Biancavilla, between 500 and 840 meters above sea level. We produce, from sapling plants that are approximately 40 years old, wines from Nerello Mascalese, Carricante and Grenache. The soils are sands and volcanic rocks, as well as mixtures of clay, tholeitic basalt and sand. We fertilize the soil with cereal and legume green manure. During the summer we use solutions of copper and sulphur, conifer resin, zeolite and potassium bicarbonate to treat the plants. In the cellar the fermentations are spontaneous with limited doses of sulfur dioxide (between 20 and 30 mg/L). We use used steel containers and tonneaux for a year and then refine in the bottle for at least two years. We are certified organic and have land in DOC and DOP areas, but we downgrade everything so as not to become bureaucratized. We experience the earth as a complex system of flora and fauna, always favoring systems of interaction between them and us.
