Installed since 2020, we are planting our vines in 2021 (1.4 ha), certified in organic farming. We also rent a few plots of old vines in the mountains that we cultivate with a rototiller (1 ha). The terroir of Paros is diverse at the level of the bedrock (granite, gneiss and limestone/marble) All our wines are vinified with indigenous yeasts and aged on lees. Our wines are unfined, unfiltered and were bottled in the spring. The estate's philosophy is to produce wines that are as close as possible to the terroir of Paros without any inputs, apart from the use of sulfur in a minimum dose between 20 mg/l and 45 mg/l of total sulphur.
