Enlaire Vins is a small winery created by Lluís Raventós and Mar Capdevila, farmers from the Costers de Ordal area (Subirats, Barcelona). The need to revalue the territory, agriculture, and in its own coherence with the life project, in 2016 they decided to start winemaking the most special plots of the Cal Gori estate, old vineyards in slopes of Mediterranean autochthonous varieties. The winery is one more step there, which allows closing the circle and giving even more strength to the project, a project whose fundamental pillars are respect for the earth, the search for authenticity and the obtaining of products of quality. The agriculture they practice is ecological, biodiversity is promoted through starting from the green roofs and the tasks are carried out as manually possible trying to practice at all times a respect agriculture. The harvest, always manual, is harvested in boxes 17 kg, with grape selection in the vineyard and taking as a reference the biodynamic calendar. The grapes are fermented in the old cellar of the Cal Gori farmhouse, where Luís and Mar live, and throughout the process of In winemaking, oenological additives are not used except for small dose of potassium metabisulfite in some wines.
