A vinification of single-varietal organic wines without forgetting Perlan, a cantonal appellation relaunched by Daniel Brenner. Targeted grape varieties: Gamay, Pinot noir, Chasselas.

The grapes are purchased from winegrowers who cultivate according to the principles of organic, or even biodynamic, farming. The grapes come from plots located in the communes of Gy, Meinier and Troinex (canton of Geneva).

Particular attention since 2019 for vintages without added sulphites, with spontaneous fermentation starts and targeted max alcohol levels. 12.5% vol ideally and depending on the vintage. The vintages are preferably single plots.

The wines are neither filtered nor fined, left for the longest time on fine lees. We carry out part of the aging in clay vats, Clayver type. These are stoneware tanks made in Vado in Liguria. We received 2 vats of 250 liters in September 2018. Then, a second series of 2 vats were recommended in March 2019 following the excellent results in the cellar. A new arrival of vats was possible for the 2023 vintage.

The bottles are Burgundian type, cork-stoppered with the little bird logo… The red wines are bottled if possible with carbon dioxide still present (protection against oxidation).

And last novelty, we are going to start reusing bottles with the deposit system from 2024.

Laurent VU, from parents who immigrated from Vietnam, grew up in Geneva. After obtaining his maturity (1988), he discovered an interest in land-related professions by doing a summer job at the Botanical Garden. His career will take him from floriculture (1988) to the engineering school of Lullier, from horticultural greenhouses for the production of Chrysanthemums (1992) to the State vineyard, and following the obtaining of the diploma in viticulture and oenology at Changins, from the production of sparkling wines (XC Oenology) to the production of organic wines since 1998 (Domaine de la Devinière). After a long trip to Southeast Asia (Thailand, Laos, Vietnam) in 2002, the wine merchant continued winemaking while joining the team of Jardins de Cocagne, an organic market gardening cooperative in 2004. Since that moment, the gardener has devoted himself fully engaged in the production of vegetables while having as a hobby a small wine-growing activity with a group of friends-exs on 7000m2 of Gamay (2006). This is the beginning of mental deconstruction and the transition to a winemaking method without added sulphites, wherever possible, and with alcoholic fermentation tests using wild yeasts. In 2017, at the dawn of his 50th birthday, Laurent found a new project to develop following the proposal from Nicolas Bloch and Daniel Brenner for the resumption of wine activity at the Saconnex-d'Arve Distillery. Laurent known as “Lolo” is seduced by the creative side of the project, the dynamics among the users of the Distillery (Distillation, brewery, cultural events). During an autumn walk, the song and the name of the Cave du Rouge-Gorge resonated….

In 2023, after a small migration to Domaine du Chambet (2021 and 2022 vintage), the Rouge-Gorge cellar returns in a brand new building. Lolo stops his salaried activity as a market gardener and devotes himself fully to the new vintage and the development of the project (rehabilitation of the production tool and various investments, collective organization of daily life with the other activities of the place).

Lolo spends part of his time working the vineyard with the team at the Chambet estate (Gy) and trades his work for grapes. A way to keep in touch with the lovely team and see the grapes flourish during the season.
