Minimus Wines is all about pushing the boundaries in winemaking. Every vintage is experimental and this wine is no different! Perhaps Chad should label this as a “Bru-TAL”? Beautiful candy red with hazy hues, a clear sign of this wine not being fined or filtered. But on the nose struck match and hard boiled egg yolk reveals the natural sulphide build up from reductive wine making. Or perhaps Chad should have fined it just a bit to reduce the further breakdown of yeast and sediments? But beyond the nose wow! Like eating fresh, tart raspberry jam, sprinkled with rose petals & spread on grilled, rustic bread while getting smacked in the mouth with chalkboard erasers! - 100% Pinot Gris - Fruit sourced from biodynamic, single vineyard farm in the Willamette Valley of Oregon - Vinified using carbonic maceration over 3 weeks - Native yeast fermented - No fining or filtration - Very low sulphur addition
