We are in the Penedes in Spain, we live in a very rural town called Sant Jaume Sessoliveres. Under the house, in the garage we make our natural wines. All the wines we make come from our vineyards, from indigenous varieties of the penedes. We do not understand natural wines if a respect for the vineyard, if not, nothing makes sense. The vines are in "baso", old vineyards, respecting nature, biodiversity, in some of our vineyards machines do not enter, we do it by hand.
As in the vineyard, in the winery the work is the same, respecting the grapes to the maximum, the minimum intervention, we do not press the grapes, it always ferments with the skins. The skins are very important to us because there is all the information about the vineyard, how you have worked the vineyard ... The fermentations are spontaneous, we do the foot of the vat in the vineyard with its own yeasts. Our wines do not filter, they do not stabilize, they do not sulfate ... we like them with a lot of energy and personality. Apart from all this, for me natural wines have to control the entire process, from the vineyard, the production and sale to the public. It does not make sense that you sell wine with personality and then you are not selling the wines. The moment you are not there, you need commercials, you start making more bottles, everything becomes an industry, for me that is not natural wine, although the whole process is very good. Natural wine is rural, artisanal and above all passionate.
