It all started in 2012, when the current owners Ketevan Akolashvili and Christian Hubert decided to purchase some land for the plantation of vineyards. Ketevan is from the village of Velistsikhe in the Kakhetian region of Georgia, which brought them to launch their activity in the nearby village of Mukuzani. In 2013, Shota Akolashvili, Ketevan's father, gave them a first plot of land planted with old vineyards. In the following years, he helped them acquire adjacent plots to finally constitute a small estate of around 10 hectares. In 2018, the old qvevris in Ketevan's family house were refurbished. The qvevris were installed by Shalva Akolashvili, Ketevan's grandfather, in 1950 when he started to produce wine and export it to other Soviet Republics. In 2019, 30 new qvevris of various capacities were ordered and the construction of a new traditional marani was launched in close proximity to the vineyards. The deep cellar made of natural stones provides ideal conditions for the production of wine and petillant naturel. The terrace on top of the building offers a breathtaking view of the vineyards and the Caucasus mountain range. The objective of Tilisma Winery is to produce minimal intervention natural wines and promote environmentally friendly viticulture practices.
