This Languedoc farmhouse, the central part of which dates from the 13th century, enjoys a remarkable geographical location in the heart of the Hérault valley. The stables, the bread oven and the cellar where we vinify are original and in perfect working order. In 2009, after spending nearly 10 years in the vineyards and cellars of others, Julien set out and finally decided to make his wine. Rather cautious by nature, we first decided to keep our respective jobs and to take advantage of our free time to set up this small farm. First rent of 3 ha, followed by another in the second year, acquisition of winemaking and viticulture equipment, rental of a cellar, and very quickly the first harvest and the first bottling. We are currently working on 11 ha, half of which is vinified at the cooperative cellar of St Bauzille de la Sylve for the organic cuvée. The Vines: Some of the vines are located around the Mas. The rest of the vineyard is located a few kilometers away, in the town of Plaissan. The vineyard has been partly restructured but retains a majority of old vines. We have a variety of grape varieties: Syrah - Merlot - Carignan - Cabernet sauvignon - Grenache - Mourvèdre - Sauvignon blanc. The pruning is done rigorously in order to favor low yield and therefore better concentration. The average yield is currently 30hl / He. The harvest is carried out only by hand in order to be able to select the bunches, and collected in crates so as not to damage the grapes. In April, with the arrival of sunny days and the grass, we work the land by removing the hoes. Aeration and non-compaction of the soil increase the life expectancy of the vines. Some of this work is done with Kiwi, our workhorse. The treatments are only based on copper and sulfur, without any pesticides or insecticides in accordance with the organic production method. We want to develop this system by extending it to the use of biodynamics. Wines : The ethics in winemaking are the same as those applied to the vine. We therefore do not add any input (yeasts, etc.) and a very low dose of sulphite is used only when it is essential. We work by assembling the different grape varieties available to us and without inputs. We generally offer a rosé, two reds, a bag in box and a late harvest. These wines are aged for two years in vats and will not be filtered or fined when bottling. A tiny part of the production is distilled to make fine.
