The estate has been located in Polisot, in the Côte des Bar (Aube, Champagne), for five generations. Roland was the first to produce champagne in 1986. Jeanne, the sixth generation, joined the family estate in 2017.
The entire estate is planted in mass selection, carried out by Robert, for the duration of a lifetime. The plots (8ha) are spread over the different valleys of the village, which is why we decided to separate the different plots for vinification, which all have different characteristics (exposure, slope, age of the vines, environment (forest, river, meadow ...).We thus produce single-plot, single-varietal and vintage Champagnes, representative of a place and a year. Our vineyard is on average 40 years old and is planted on clay-limestone soils with under -Kimmeridgian soils.
We cultivate our vines organically, associated with biodynamic practices (horn dung, horn silica, homemade biodynamic compost, etc.), certified since 2014. The soil is maintained with light plowing or the passage of bidourettes (and a lot of elbow grease!). The harvest is manual; The alcoholic fermentations start naturally or thanks to a yeast starter harvested a few days before the start of the harvest. The wines are neither fined nor filtered. The aging is done until bottling which takes place in Spring, in vats, barrels or demi-muid. The wines finally remain on a latte between 2 and 5 years, to then be disgorged without adding liquor. Observation in the vineyard, tasting in the cellar, these are our watchwords. Intervene as little as possible while being present, all the time.
