I settled in 2020 in Beaujolais (Salles-Arbuissonnas) to create the L'Arbuissonnière estate. I work on an area of 3.5 hectares in conversion to organic farming (certified in 2023). In the vineyard: non-manipulative pruning, eco-pastoralization, natural grassing, spring work with caterpillars, biological treatments (herbal teas, sulfur and copper), manual harvesting. In the cellar: vinification without additives, indigenous yeasts. Sometimes 2g/hl of SO2 after malolactic fermentation if necessary and 2g before bottling.
