We are a small farm in the heart of Valcalepio, in the province of Bergamo, a few steps from Lake Iseo, an area that has always been suited for the production of quality wines. We manage a small half-hectare vineyard in Grumello del Monte (Bg), planted in 1998, which we lead under a non-certified organic regime, using low doses of copper, sulfur and zeolite. A part of the grapes we make into wine are instead purchased from quality producers in the area we work with. Our goal is to enhance and promote the Bergamo area and its winemaking potential, but also to propose a model of land cultivation that is able to combine respect for the environment, respect for those who work there and for those who will then go to drink the our wine. In the vineyard, manual interventions, minimal and aimed at improving the intrinsic resistance of the plants: no topping, one cut of grass a year to preserve the turf, pruning that respects the lymphatic flow, spring dividing to reduce the leaf load and increase health of the grapes. The harvest is manual and the moment of collection depends on the ph levels and sugar content of the grapes. The ph is one of the main factors that influence our harvests. Musts with low ph levels will tend to preserve themselves more from bacterial attacks, allowing us to have clean and healthy wines. The work in the cellar mirrors that in the vineyard: few interventions and only if necessary. We use an old manual press and a small destemmer. In this phase the dry ice helps us to protect the must from oxygen, avoiding the addition of sulfur dioxide. The fermentations take place from pied de cuve with spontaneous fermentation. We use steel tanks and exhausted barriques to avoid overwhelming the aromas of the wine with those of the toasting. Our wines are not clarified or stabilized and are not filtered before bottling, guaranteeing the full integrity of the product.
